Cooking was important for pre-modern people because it made nutrients available in food items like bones, where they otherwise would have been inaccessible. Cooking was one of the first steps in humans’ changing relationship with food and the various methods and means of cooking are an important part of Charles Sanft’s version of HIST 261, World Civilizations, which takes food as its focus.
